Char vs Uncharred
Charring the inside of an oak barrel is a common tradition when aging whiskey because of how it affects the flavor and character.
When you char the wood, you burn the inside to create a layer of charcoal that is intended to add deeper flavors of caramel, toffee, and vanilla due to the higher levels of carbon, which filter and react with the whiskey. New charred oak barrels are required for the production of bourbon, rye, and other American whiskeys.
When you don't char the wood, the whiskey will still be interacting with the wood but it will just have a lighter, less oaky flavor.
